You were a machinist in some company doing something that you just did not enjoy...
NOW you are a full fledged CHEF. Just think, you are doing something that you love to do. Would probably do for free AND they pay you to do it. HOW FREAKING GREAT IS THAT!
My friend, making that move took balls the size of grapefruits to do. I salute you and hope that one day, the jelly beans in my trousers can grow enough so that I too can live that life.

I'm very proud too that you are a specialist in our french most famous traditions : cooking !...
I know how hard it is to be a good one (I got a famous french chef who's a good friend of mine in San Diego (La Jolla). Have a look here

Thanks folks! It was a looooooooooooooooooong haul and I've got a lot to learn before I'll be on Iron Chef America !! LOL I'm just damn happy to change to a career that I'm happy doing, even if I don't get rich or famous,I'll be content with the smell of fresh baked bread , homemade pizzas or brownies wafting thru the house knowing that I made it. Now....... anyone for baking percentage problems or dough temperature calculations ?? heheh
